Forgive me for being an ignoramus, but what would count as the server that I would write when creating my bot on GroupMe?

Sorry, what do you mean by server?

You need to provide either a domain or IP address to the machine you're running the bridge on. So really, the only practical way you could run the bridge would be on a server, which you would use the IP address or it's domain name for the callback URL. The README has details on the format of the URL.

You could run it on your machine at home if you port forwarded the port the bridge is listening on, however that's not very secure and generally a bad idea.
