Change "config.toml" to "hugo.toml" in the README.md documentation #596

Hi! At some point we need to change these links yes, tho, it will set minimum version of hugo to 0.110.0, perhaps it is time?

In case this is merged, the configs in /exampleSite should probably be renamed?

@leoheitmannruiz Agreed, renaming the config in the exampleSite is a good idea. I'm a little busy for the next few weeks. Perhaps you or @alex-shpak (or someone else) can take this on, please.
