Move code into subdirectories and PSR-4 #203

Change composer.json, and phpunit.xml.dist to suit.

This makes the bundle compatible with Composer v2, for #200. I've also installed my fork into a new Symfony v5.2.0 project, and run a simple fetch & display of the resulting data.
