Updated APP_KEY section to reflect recent changes

Leaving myself a note but README.md seems to be a duplicate of the environment variables page we should consolidate these two pages down to one.

Thanks for the PR, I'm going to close the PR as I intend to merge installation and env vars this week to reduce documentation duplication.
