Adapted/added cross-platform compatability #1

added logfilename to capture logs (rather than print)
adapted logging to track start/finish/actions
cross-os compatability
- checks for whether 'standard' paths work
- shifted from raw-commands to Python equivalents
if env. vars aren't available, will prompt user
logs unfound recipients and passes to next

This is my 2-bobs, hopefully it's useful :)

absolutely makes sense, definitely works the same on windows as well! i usually build things for automation/scheduling/business users who can't be trusted to log, so 'explicity log everything to file by default' is sort of burned in to me haha remove the logfile part for sure, just maybe stick something in the instructions to tell end users to do it?
