Work I needed to do, to get running on an M1 Mac

Adding a Containerfile and some docs on how to get started with it

Remove supposedly unused skia dependency
Update numpy to 1.21.0 to fix build issues
Document container building
Update unicodedata to 14 for python 3.9/3.10 support
