Notes:

Before anything, there is a contractual part that needs to be filled in so we are registered as service provider and I can register client secret + app
Their OpenID connect implementation supports only OpenID claim (sub) so it may be difficult / impossible to map that to an email if we don't know it (it is not included in the sub somehow) - details here.

Email sent to their support to clarify next steps. There is a branch on the server with draft config.
