Assisted digital new persona document #531

Assisted Digital team have created 1 new persona document to replace 8 individual documents. This pull request replaces the 8 and add 1 new document and changes a link so it can be downloaded. I did this on behalf of @benaldo1975

This will also need redirects for the old content, to point to the new single document.
