MAINT: update notebooks for Altair 4.0 #24

This PR just updates the notebooks using Altair 4.0. I opened each notebook and did "Restart Kernel and Run All..."

There is no editing for content.

Awesome!

Part of this change is moving to Altair 4.0's default HTML renderer, which means charts show up with interactions in nbviewer! https://nbviewer.jupyter.org/github/altair-viz/altair_notebooks/blob/82e5e841acad68db3778785d964e6a60701628fe/notebooks/02-Tutorial.ipynb

Nice! I plan on going back later and reviewing the content of each notebook, but the first step was brining the old ones up to date.
