In the resource editor types->sky, there is an example, BlueDaySky. I would
just use the BlueDaySky.mesh they have there and just change the material
applied to it. Also, the way they do the cloud is have two diffuse maps one the
background sky and the other the clouds, with the clouds animated in the editor.
