The name of the document types should be "translated" in full names. Instead of the name "typology", "document_types" would be most likely better.

It's more informative but there's a readability issue to solve.

Some ideas :

keep the short labels on the drawing and reveal the long labels with hover
put the labels outside the donut (possibly with a line), but it should be done on the horizontal areas in order not to take too much space

Given that you can have the list when you click the + button, showing labels on hover would be better.

It would be better, agreed. But maybe I should open an independent issue for the donut design in general for implementing a decent solution for all labels in donuts.
