fix arm builds, set to build with same image as arm in libiio
add builds for Ubuntu-22.04 and macOS-12

V2: ubuntu-22.04 was disabled because now is fail and I was thinking for a future PR to update the rest of the builds to use ubuntu docker images and yaml structures like in libiio
