In your examples, you have two endpoints per channel:

I can't get my head around why this is necessary. In the rpmsg-lite-examples repo there is only 1 endpoint.

Is it one for receive and one for send ? Are the endpoints not duplex ?

I'm being an idiot. One is for normal echo the other for capitalization ?
