revise the script & add info for doing #66 w/ the engine params for polysub

agg the issue is there needs to be some kind of callback to just ping the dirty flag or else things get ineffecient

i'm gonna consider a PR to norns for this it feels like a reasonable addition

ok ---- i think the nice solution is to bind the screen controls to params and just ignore params for polysub (don't initialize them) - we can then demo link for the halfsecond param & I think that'll work nicely and not be too overwhelming for this study
