It's cold out so I'd like to try some stews. Check this one out!

🎀 Context

Brunswick stew is a Southern dish that features a tomato base with beans, vegetables, and meat. Early Brunswick stews were often made with squirrel, rabbit, even opossum, basically whatever was available. These days pork, chicken, and beef are common. The original thinking was to use local ingredients and those you have on hand, which remains the same today.

Serve this Brunswick stew with cornbread, pickles, and coleslaw or a salad on the side.

Quick Recipe I've made in the past (good starting point)

Yield: 20+ servings (lots)

Ingredients

Directions

  1. Melt the butter in a large saucepan over medium heat
  2. Add diced onions and garlic, saute until onions are translucent, about 12 minutes
  3. Stir spices (cayenne pepper, black pepper, worcestershire) and simmer 5 minutes
  4. Add BBQ Sauce
  5. Stir in Pulled Pork, Chicken, Turkey, and Brisket
  6. Add canned goods (vegetables)
  7. Stir is chicken stock and simmer (about 2 hours)

Serve

Serve in a bowl with cornbread
