Worth a note too that it doesn't seem to support anything that's not the Latin script, which makes this issue quite severe (assuming it's not some weird problem with my setup). The Japanese, Cyrillic, etc. all render as boxes for me.
Okay, this seems related to these issues on Windows:
I set my font settings like the following:
"defaultFontName": "Noto Sans CJK JP",
"decorativeFontName": "Noto Sans CJK JP",
And this fixes font rendering for Japanese in particular (which is where my main worry was) but it stays broken for most other languages unless I set it to something else with better support for a given language. Just 'Noto Sans' only loads support for Extended Latin at most, and 'Noto Sans CJK JP' still causes issues with rendering i.e. Arabic or Cyrillic scripts, and, most relevant to the issue I'm commenting on here it has the same issues with emojis. Usually when I pick either of those fonts as my default in most other programs, if it runs into a char that font doesn't have, it will I guess load it as a fallback from another font in the family that does have it. Vintage Story does not. Going back to the emojis issue, I don't have a font on my computer that contains both emojis and normal text, so there's no way for me to fix this issue without completely destroying text rendering.
