[Refactor] Remade the modpack #1

This PR is recreating from scratch the modpack.

Now the modpack is on 1.16.5 and will be hosted on Modrinth.

Look at the file changelog.md at the root of the repo to see all the changes.

When 0.8.0 will be finished, the PR will be merged.

if today's beta test goes well, the 0.8.0 will be released and the PR will be merged
