This PR contains a restructure of the README as well as the addition of new resources.

From the guidelines, Includes a succinct description of the project/theme at the top of the readme is missing. Otherwise, very nice!

The previous version had:

Self-sovereign identity (SSI) is a term used to describe the digital movement that recognizes an individual should own and control their identity without the intervening administrative authorities. SSI allows people to interact in the digital world with the same freedom and capacity for trust as they do in the offline world. (by Sovrin Foundation)

Maybe we can use this for now?
