Update links to reflect new organization #587

SUMMARY

On 12 Feb 2024, this role was transferred to the ansible-collections organization. A larger refactoring will take place in the future, but for now, let's at least update the URLs to point to the new home.

I guess they are to be handled separately. tbh, I have no idea about these repos; I've only used consul and thus am only active on this one.

Regarding CI, it's on my list of things to do, I will hopefully have some time to address that this week, but needless to say, this change shouldn't break CI. :slightly_smiling_face:
