Change doc theme to sphinx immaterial

This PR changes the theme of the documentation generated with RTD to sphinx-immaterial. Additionally:

• Rearranged the dependecies in the requirements.txt files
• Moved images to a separate directory
• Updated the Ubuntu image versions used in CI
