What is the purpose of this pull request?

AnyCable provides using CLI keys along with environment variables. These updates make environment variables more obvious to use.

What changes did you make? (overview)

Fixed typo in StatsD section
Added explanation of environment variables naming convention
Added mapping table of CLI keys and environment variables
