What this PR does / why we need it:

Use CouchDB 3.2.2 image by default

Uses the latest published version of couchdb https://github.com/docker-library/official-images/commit/4afb03433fc4f264398d2211d92f306fcefc0205

I couldn't execute the tests, I think it was broken on the previous versions. I'll try to understand why and submit a PR if I suceed. Thanks :-).
