Changes docker example to follow https://github.com/deviantony/docker-elk.
Simplifies read-me a lot.
Removes older and unused examples.

Docker example works for me. I fixed a typo and added a requirements.txt. We also should improve the K8s example at some point to include a cleanup script at minimum... later.
