kie-issues#648: report cypress results in CI publishers #1903

Adjusting cypress configuration files to save test reports into a location that is consumed by CI publishers.

Accounting for the wildcard '**/junit.xml to pick up the reports after the changes.

To be verified by the PR check test results.

Results are now reported for cypress tests correctly. e.g. https://ci-builds.apache.org/job/KIE/job/kogito/job/main/job/pullrequest_jobs/job/kogito-apps-pr/job/PR-1903/2/testReport/(root)/Check%20navigation%20panel/Process_List_Page_test_Check_page_structure_Check_navigation_panel/ from management-console-webapp package.
