Upgrade react-scripts to v5 and introduce react-app-rewired

What does this change?

• upgrades react-scripts from v4 to v5
• introduces react-app-rewired in order to extend the Webpack configuration

We needed to extend the default Webpack config in order to:

• provide polyfills for some core node modules (react-scripts v5 uses Webpack v5, which no longer automatically polyfills core node modules, which some of our dependencies need)
• ignore source map warnings from our dependencies
• bundle the JS similar to v4
