update chains names for Ethereum #1160

(from Burak) Currently we refer to Ethereum mainnet as mainnet and Ethereum testnets with goerli and sepolia. This may be confusing, we may want to switch to ethereum, ethereum-goerli, ethereum-sepolia, respectively.
