Document OEV gateway #1227

In (unreleased) v11 we have added support for OEV gateway, which is needed to OEV relay (for now private). It was initially documented in https://github.com/api3dao/api3-docs/pull/1220 but we have made some small changes since then.

I tried to search for signed data gateway and modify the sections to include info about OEV gateway. Another change I made was to remove "both/two" and use "all/a few" since we now have 3 gateways.

@Siegrift I cannot find this change in the 4 files this PR changes. What am I missing?

That was my comment for an earlier version of the docs. I then noticed that @amarthadan intentionally created a separate document for OEV so I reverted the changes in https://github.com/api3dao/api3-docs/pull/1227/commits/a05ff2f0ada991f4aad07d3e5b408674401f62b2
