I assume that this is referring to the "inspect submission" page that is only accessible to the course staff, never to students.
You could actually use the normal submission feedback page that never shows information about the assistant/teacher who has manually assessed the submission. The feedback page shows the feedback and points, but not the name of the manual grader.
You can access the normal submission feedback page from the inspect submission page. In the top "breadcrumb" component that shows the titles of the current page and its parent pages, you can click "Submission XYZ" (Palautus ID XYZ in Finnish).
Is this good enough for your use case?
In the exam review sessions, teacher has to show grading to the students (as students cannot see their final exam task gradings directly due the firewall). In the task manual grading view, teachers should be able to hide the name of the assistant who has done the manual grading. However, the name should be visible somewhere (maybe behind a button or by hovering, whatever), but not visible as default.
