Update IPFS docs to reflect new peer IDs + ensure IPFS ports are publicly and directly accessible #39

We need to open a PR with the new peerIDs of our IPFS nodes (prod-edge01 through 08 + prod-carrier01) as well as ensure that the ports they are using are directly port forwarded in the MikroTik and accessible to the world.

Hi @Zorlin, Sry to bother you, but knowing the peer IDs is pretty crucial for me as I otherwise cannot access the data. Were you able to make any progress here? Cheers!

@observingClouds Not yet, sorry; we've gone through some org changes and Estuary now lacks any staff other than, I guess, me - things have been incredibly busy before and since. I'll have a look when I can, I understand the urgency as this effectively breaks IPFS retrievals until fixed.
