Replace the maintainer info for node stacks

Refs: https://github.com/appsody/stacks/pull/823 . Looks like the branch is not existing anymore, so cannot push there.

Thanks for this PR @gireeshpunathil

The maintainer info is read fro mstack.yaml and added as a label on stack image, and passed on to application images, and deployments that use the stack.

It might be worth updating stack versions in 3 separate PRs so we can release them. and update this information in all places.
