Adds docs for the new console roles

Why was the table of scopes removed?

@stnguyen90 eldad mentioned that he was not too sure of table since It includes some roles which are not public ( i.e not documented ) like billing, assistant and vcs. Also it looked messy since the roles were not sorted well .
