Having to install sof-firmware
appears to be a hardware specific issue.
Can you confirm that this is the case? As I can't reproduce this on my laptop (which only needs linux-firmware
to function).
The config in the log shows that you did not select PulseAudio.

There is logic to install the sof-firmware
package in install_audio_config()
.
On the Advanced Linux Sound Architecture talk page topic of ALSA, SOF, firmware... confusion! the ArchWiki admin nl6720 commented:

I selected pulseaudio in arch install but then only a dummy output was available. The fix was to install sof-firmware alsa-ucm-conf manually.
