update: Still seeing categories getting un-set with 3.10.09-alpha-2.

(Just offering updates; I don't mean for this to be pestering you or anything.)
I'm new to the addon as of a few hours ago, but would like to add that this is also happening to me. Using v31009. I had all my Heartstones and traveling items set to a custom category and they were grouping correctly. I used my SW tabard to travel and once it loaded in to SW they all lost their custom grouping.
Also, just noticed the custom category still exists and said 10 items. I opened the config for Category Sets, not only does it still exist, but those items show assigned to it still. But they aren't working in the actual bag menu. Clicking the item in Edit Mode does not show the custom category listed as assigned.
I left everything as is, did a /reload and now they are back in the appropriate custom category. Sorry if this is too much, just being detailed in case it's helpful for troubleshooting.
Update: Still happening on 3.10.10-alpha-2.
Checking in: I have not noticed this issue happening in a while. Been using the alpha branch; presently on mainline 3.10.14 (i.e. the most recent of them all).

What game client are you playing? Retail, Burning Crusade, Classic / Live, PTR, Beta Retail

Describe the bug Items in AI are "forgetting" the custom categories to which I've assigned them, resetting to their default built-in categories.
To Reproduce Steps to reproduce the behaviour, if possible: None known, at present.

Additional context It seems to be happening at random times to random items-- to both new and old items, and with new and old custom categories.
N.B. I am updated to 3.10.09 (release), but this issue has been happening since the second phase of the Dragonflight prepatch (10.0.2) began, with each current version of AI as it's come out.
