What is the difference between these two kind of images? Would be possible to make a little clear what they mean?

kinetic is made from Ubuntu packages and sid from Debian. Both are pretty much latest and if you ask this question its pretty much irrelevant. Kinetic its probably a bit safer, more stable assembly.
