Remove obsolete linked_proxy example

Now that we use Blender's library overrides instead of our own proxy system, this example is no longer needed. In fact, the main file even crashes Blender when opening it 🙃

I don't think that we need an replacement for this example since it's now all based on Blender functionality, but if I should add one, please let me know.
