Document `dev` option in README #7

Thank you for your time on this plugin! I got confused at the beginning because I couldn’t find how to switch between dev and production mode. I think this clarify a bit the behavior of the plugin.

Thanks for the PR! I agree that it would be a good idea to document the option. But maybe it could be even more clear, that in a normal usecase you would work with the .lock file approach as shown in the two starter kits and the dev option is only there for really specific cases where you want to implement your own dev/prod behaviour. What do you think?

@arnoson I have added some docs about the .lock behavior and adapted the rest. Feel free to adapt it directly if you have specific ideas in mind.
