@rachelcarmena @raulraja this PR addresses 0.11.0 support.

upgrade jackson to 2.12.3 as earlier jackson versions may contain security vulnerabilities
update Option codec so to make it honor object mapper configurations, this includes the NON_ABSENT inclusion
