Update plot ratios for the PDF version #18

I've adjusted the plot ratios and made sure there are no issues with overprinting. And for the getting started section I've rotated those plots so that they don't feel squished along the year dimension (and so the direct labels look ok!)

I've also taken some of the plot-related things in #15 (which I will conflict with, but hopefully only in _quarto.yml and .gitignore IMHO the changes I have are slightly more general / add fig-widths that match the latex template even though they are slightly off from what the publisher told us)

I'm going to merge this to get out of the way of other PRs. Of course, feel free to back any of this out that isn't right!
