Add captions using quarto to get numbers + proper formatting #37

Resolves #23 and #36

I haven't (yet?) removed the ggplot titles. They are slightly duplicative, but I kinda like the title along with the caption. I haven't looked yet for advice on doing only one or the other, but they do convey slightly different information. Thoughts? Strong opinions?
