Check if it's possible to switch to endclothing/prometheus_client_php #11

It looks like the new maintainer of the php client library implemented all the features that I needed in the bundle. Moreover, he used the same PR from the original project (that was not accepted there by the time). So it looks like we can now switch to a well-maintained library without breaking anything and even without changing anything except the used library references. Let's see...

For it to be done, there should be functional tests that will ensure the stability.
