Move to Sentry, and update intercom

Converts Folio from Hockey (Which is shutting down) to Sentry (which we standardized on a few years back)

• Also updates Intercom, because it's a major version

• Also turns on bitcode, because hockey was why it was disabled

• Also edits the Fastlane deployment to upload dSYMs
