Pin hugo version 0.125.5 #196

Checking if this is causing the errors in building/deploying the website.

This is not the best solution but it works for now. Something changed between hugo 125.5 and 126.1 that is affecting us negatively, we'll have to dig to check what changes are breaking the build for us. For now, pinning the version works. I'll create an issue ticket to assess this in the future and hopefully find a better solution. @jchodera Your input is desired, any thoughts? I'll dig into the changes in both versions as soon as I have the bandwidth for this.
