docs: explain what and how to extend #2397

The current docs are not entirely clear on how to extend admonitions theming to be able to apply different styles.

As a person going through a bit of research to figure out how to do this it wasn't straight-forward. With this PR, it is my hope that this section update will provide a better reference about custom convertors and how to use them for folks who aren't fluent in using Asciidoctor and/or Ruby.

Thanks. I have revised the section to introduce the extended converter and use Antora xrefs to refer to the section in the docs.
