Updating main README and component README #3

What/Why?

src/components/README.md is empty! I'm adding a section on how to create new components (because I'm forgetful) and a section listing out each component by name.
The project README is sparse and I want to discuss the lovely file structure I picked up from Shopify's polaris-react repo.
I'm linking my Trello board for this project in case anyone's interested in my workflow.
