v2.0 add system variables #195

Removes hard coded directories and instead checks for system variables.

Happy for you to merge this.

I think having the default folders as 'None' rather than None is a bit clunky, but any alternative is likely going to be even clunkier

I did have None originally, but I've just realised I can actually do this. I'll push the change in a bit.
