This updates the docs and fixtures using Asterisk 15.6.0 as a few APIs/fields have been added since that was last done.
Replaced references to SIP/ with PJSIP/ for endpoints in various examples.
Cleaned up a few changes to the README that has not been made in the template, leading to them being overwritten when running grunt gendocs.
