docs(#429): Elite S2 Profiles carry over #430

Fixes #429.

Amend profile switching documentation to state that profiles set to an Xbox Elite Series 2 controller using the Xbox Accessories app will load and operate correctly. Slots without set configurations inherit the default profile's behavior.
