While tracking in 'fine' mode, I noticed sometimes it will freeze up (pressing
menu can take 10 or more seconds before it comes up, for example.)

This might be caused by very long tracks or constant distance calculations, or
some other feature, I noticed when I turned off "Distance covered" it seemed to
be a bit better.

I noticed the same issue. However, 'fine' mode was not the problem. It's the
track color! Settings -> Display -> track color. Try setting it to 'green',
'red', or 'waypoints'.
