Include scanimage version 2021 #13

Hello scanreader team,

we are using scanreader with the scanimage version 2021. To make it work I added the Scan2021 class which uses the Scan5Point3 interface as previous versions. We are just getting started but so far everything seems to be in order. Let me know if anything is missing for this PR.
