docs: Work around breakage in Read The Docs' PDF rendering. #342

RTD seems to be running a fossilised version of Debian (is there any version of Debian that isn't?), and thus an incomplete TeX Live which lacks fonts like Libertinus (which apparently only appeared in 2018).

For bonus points, RTFD only use pdfLaTeX. sigh
